Air Fried Blueberry Pancakes

Pancakes have been a breakfast staple for centuries, with the first recorded recipe dating back to the 15th century. Blueberry pancakes, however, are a more recent invention, with blueberries being added to pancake batter in the early 1900s. The invention of the air fryer has made it even easier to make these delicious pancakes in a fraction of the time.

These fluffy and delicious blueberry pancakes are made in the air fryer for a quick and easy breakfast.

Ingredients

  • 1 cup all-purpose flour

  • 2 tablespoons sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 cup milk

  • 1 egg

  • 2 tablespoons melted butter

  • 1 cup fresh blueberries

  • Cooking spray

  • Maple syrup (for serving)

Directions

  • In a large mixing bowl, combine 1 cup of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
  • In a separate bowl, whisk together 1 cup of milk, 1 egg, and 2 tablespoons of melted butter.
  • Slowly pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Gently fold in 1 cup of fresh blueberries into the batter.
  • Preheat your air fryer to 375°F.
  • Lightly grease the air fryer basket with cooking spray.
  • Using a 1/4 cup measuring cup, pour the batter onto the greased basket, leaving enough space between each pancake.
  • Cook the pancakes for 5-6 minutes, flipping halfway through, until they are golden brown and cooked through.
  • Repeat with the remaining batter, greasing the basket as needed.
  • Serve the blueberry pancakes warm with maple syrup and additional blueberries on top.

Notes

  • Make sure to not overmix the batter to avoid tough pancakes.
  • You can use frozen blueberries instead of fresh, just make sure to thaw them before adding them to the batter.
  • You can also add a teaspoon of vanilla extract to the batter for extra flavor.
