These delicious blueberry muffins are made in the air fryer for a quick and easy breakfast or snack option. The air fryer gives them a crispy exterior while keeping the inside moist and fluffy. They are bursting with juicy blueberries and have a hint of vanilla for a delicious flavor.

Ingredients

  • 2 cups all-purpose flour

  • 1/2 cup sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1/2 cup melted butter

  • 1 cup milk

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1 cup fresh blueberries

Directions

  • Preheat your air fryer to 375°F (190°C).
  • In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  • In a separate bowl, whisk together 1/2 cup of melted butter, 1 cup of milk, 1 egg, and 1 teaspoon of vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Gently fold in 1 cup of fresh blueberries.
  • Grease a muffin tin with cooking spray and spoon the batter into each cup, filling them about 2/3 full.
  • Place the muffin tin in the air fryer basket and cook for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the muffins cool for a few minutes before removing them from the tin.
  • Serve warm and enjoy!

Notes

  • You can use fresh or frozen blueberries for this recipe.
  • Make sure to not overmix the batter, as it can result in tough muffins.
  • You can add a streusel topping if desired, by mixing 2 tablespoons of melted butter, 1/4 cup of flour, and 2 tablespoons of sugar and sprinkling it on top of the batter before cooking.
