Ingredients
2 flour tortillas
1 cup cooked and shredded chicken
1/2 cup shredded cheese
1/4 cup diced onions
1/4 cup diced bell peppers
1/4 cup diced jalapenos
1/4 cup chopped cilantro
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Directions
- Preheat your air fryer to 375 degrees F.
- In a bowl, mix together the shredded chicken, diced onions, bell peppers, jalapenos, cilantro, cumin, chili powder, garlic powder, onion powder, and salt and pepper.
- Place one tortilla on a flat surface and sprinkle half of the shredded cheese on one half of the tortilla.
- Spread the chicken mixture on top of the cheese, leaving a small border around the edge.
- Sprinkle the remaining cheese on top of the chicken mixture.
- Fold the tortilla in half to cover the filling.
- Place the quesadilla in the air fryer basket and cook for 5 minutes.
- Flip the quesadilla and cook for an additional 5 minutes, or until the tortilla is crispy and the cheese is melted.
- Repeat with the remaining tortilla and filling.
- Slice the quesadillas into triangles and serve hot with your choice of toppings and dipping sauces.
Notes
- You can use any type of shredded cheese for this recipe, such as cheddar, Mexican blend, or pepper jack.
- Feel free to add in any additional toppings, such as diced tomatoes, avocado, or salsa.
