These flavorful and healthy chimichurri cauliflower steaks are a perfect vegetarian option for dinner. They are cooked to perfection in the air fryer, resulting in a crispy exterior and a tender interior. The tangy and herbaceous chimichurri sauce adds a burst of flavor to the cauliflower, making it a delicious and satisfying meal.

Ingredients

  • 1 head of cauliflower

  • 1/4 cup of olive oil

  • 2 tablespoons of red wine vinegar

  • 1 tablespoon of minced garlic

  • 1/4 cup of chopped parsley

  • 1 teaspoon of dried oregano

  • 1 teaspoon of red pepper flakes

  • Salt and pepper to taste

Directions

  • Preheat your air fryer to 400 degrees Fahrenheit.
  • Cut a head of cauliflower into thick slices, about 1 inch thick.
  • In a small bowl, mix together 1/4 cup of olive oil, 2 tablespoons of red wine vinegar, 1 tablespoon of minced garlic, 1/4 cup of chopped parsley, 1 teaspoon of dried oregano, 1 teaspoon of red pepper flakes, and a pinch of salt and pepper.
  • Brush the chimichurri sauce onto both sides of the cauliflower steaks.
  • Place the cauliflower steaks in the air fryer basket in a single layer.
  • Air fry for 10-12 minutes, flipping halfway through, until the cauliflower is tender and lightly charred.
  • Serve the chimichurri cauliflower steaks with extra sauce on top, if desired.

Notes

  • Make sure to cut the cauliflower into thick slices to prevent them from falling apart in the air fryer.
  • You can use any type of vinegar in the chimichurri sauce, but red wine vinegar adds a nice tanginess to the dish.
  • Feel free to adjust the amount of red pepper flakes according to your spice preference.
