Crispy and Quick, Guilt-free Air Fried Eggplant Parm

Eggplant parmesan, also known as melanzane alla parmigiana in Italian, is a classic Italian dish that originated in the region of Campania. It is believed that the dish was created in the 18th century, and it quickly became popular in Italian-American cuisine. Traditionally, the eggplant is breaded and fried in oil before being layered with tomato sauce and cheese. However, with the rise of air fryers, this traditional dish can now be made in a healthier and easier way.

Crispy and delicious eggplant parmesan made in the air fryer. A healthier and easier way to make this classic Italian dish.


  • 1 large eggplant

  • 1 cup breadcrumbs

  • 1/2 cup grated parmesan cheese

  • 2 eggs

  • 1 cup marinara sauce

  • 1 cup shredded mozzarella cheese

  • 1/4 cup chopped fresh basil


  • Preheat your air fryer to 375°F.
  • Cut the eggplant into 1/4 inch slices.
  • In a shallow dish, mix together the breadcrumbs and parmesan cheese.
  • In another shallow dish, beat the eggs.
  • Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture.
  • Place the breaded eggplant slices in a single layer in the air fryer basket.
  • Cook for 10-12 minutes, flipping the slices halfway through.
  • Once the eggplant is crispy and golden brown, remove from the air fryer and set aside.
  • In a small saucepan, warm up the marinara sauce.
  • In a baking dish, layer the eggplant slices with the marinara sauce and shredded mozzarella cheese.
  • Place the dish back in the air fryer and cook for an additional 5-7 minutes, until the cheese is melted and bubbly.
  • Serve hot, topped with chopped fresh basil.


  • Make sure to slice the eggplant evenly to ensure even cooking.
  • You can use any type of marinara sauce for this recipe.
  • Serve with a side of pasta for a complete meal.
