Crispy and delicious eggplant parmesan made in the air fryer. A healthier and easier way to make this classic Italian dish.

Ingredients

  • 1 large eggplant

  • 1 cup breadcrumbs

  • 1/2 cup grated parmesan cheese

  • 2 eggs

  • 1 cup marinara sauce

  • 1 cup shredded mozzarella cheese

  • 1/4 cup chopped fresh basil

Directions

  • Preheat your air fryer to 375°F.
  • Cut the eggplant into 1/4 inch slices.
  • In a shallow dish, mix together the breadcrumbs and parmesan cheese.
  • In another shallow dish, beat the eggs.
  • Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture.
  • Place the breaded eggplant slices in a single layer in the air fryer basket.
  • Cook for 10-12 minutes, flipping the slices halfway through.
  • Once the eggplant is crispy and golden brown, remove from the air fryer and set aside.
  • In a small saucepan, warm up the marinara sauce.
  • In a baking dish, layer the eggplant slices with the marinara sauce and shredded mozzarella cheese.
  • Place the dish back in the air fryer and cook for an additional 5-7 minutes, until the cheese is melted and bubbly.
  • Serve hot, topped with chopped fresh basil.

Notes

  • Make sure to slice the eggplant evenly to ensure even cooking.
  • You can use any type of marinara sauce for this recipe.
  • Serve with a side of pasta for a complete meal.
