A flavorful and healthy side dish that is perfect for any meal. These herb-roasted root vegetables are easy to make and packed with nutrients.

Ingredients

  • 1 pound root vegetables (carrots, parsnips, sweet potatoes, turnips, etc.), peeled and chopped

  • 2 tablespoons butter, melted

  • 1 tablespoon chopped fresh herbs (rosemary, thyme, sage, etc.)

  • Salt and pepper, to taste

Directions

  • Preheat your air fryer to 375 degrees Fahrenheit.
  • In a large bowl, toss the chopped root vegetables with melted butter, fresh herbs, salt, and pepper.
  • Place the seasoned vegetables in the air fryer basket, making sure they are in a single layer.
  • Cook for 10 minutes, then shake the basket to redistribute the vegetables.
  • Cook for an additional 10 minutes, or until the vegetables are tender and lightly browned.
  • Serve hot as a side dish or enjoy as a healthy snack.

Notes

  • Make sure to cut the vegetables into similar sizes to ensure even cooking.
  • Feel free to use any combination of root vegetables such as carrots, parsnips, sweet potatoes, and turnips.
