This is a healthy and delicious way to enjoy eggplant without the added oil from traditional roasting methods. The air fryer cooks the eggplant to perfection, giving it a crispy exterior and a soft, tender interior.

Ingredients

  • 1 large eggplant, cut into 1-inch cubes

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 teaspoon Italian seasoning

Directions

  • Preheat your air fryer to 375°F.
  • In a large bowl, toss the eggplant with olive oil, salt, pepper, and Italian seasoning.
