Crispy and flavorful roasted fingerling potatoes made in an air fryer. Perfect as a side dish or snack.

Ingredients

  • 1 pound fingerling potatoes

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon dried thyme

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Directions

  • Preheat your air fryer to 400°F (200°C).
  • Cut the fingerling potatoes in half lengthwise.
  • In a bowl, mix together olive oil, garlic powder, dried thyme, salt, and black pepper.
  • Add the potatoes to the bowl and toss to coat them evenly with the oil mixture.
  • Place the potatoes in the air fryer basket in a single layer.
  • Cook for 12-15 minutes, shaking the basket halfway through cooking.
  • Once the potatoes are golden and crispy, remove them from the air fryer and serve hot.
