Ingredients
1 cup flour
1/4 cup granulated sugar
Pinch of salt
1/2 cup cold unsalted butter
4 ounces cream cheese
4 tablespoons apricot preserves
4 tablespoons chopped walnuts
4 tablespoons mini chocolate chips
1 egg, beaten
Directions
- Preheat your air fryer to 375°F.
- In a medium bowl, mix together 1 cup of flour, 1/4 cup of granulated sugar, and a pinch of salt.
- Cut in 1/2 cup of cold unsalted butter until the mixture resembles coarse crumbs.
- Add in 4 ounces of cream cheese, cut into small pieces, and mix until a dough forms.
- Divide the dough into 4 equal pieces and flatten each piece into a disk.
- On a lightly floured surface, roll out each disk into a 6-inch circle.
- Spread 1 tablespoon of apricot preserves on each circle, leaving a 1/2 inch border around the edge.
- Sprinkle 1 tablespoon of chopped walnuts and 1 tablespoon of mini chocolate chips on top of the preserves.
- Roll up the dough tightly, starting from the edge with the filling, and tucking in the sides as you go.
- Place the rugelach on a piece of parchment paper and brush the tops with a beaten egg.
- Place the parchment paper with the rugelach in the air fryer basket and cook for 8-10 minutes, until golden brown.
- Remove from the air fryer and let cool for 5 minutes before serving.
Notes
- Make sure to use cold butter and cream cheese for the dough to ensure a flaky texture.
- Feel free to use any type of jam or preserves for the filling, such as raspberry or strawberry.
- You can also use different types of nuts, such as almonds or pecans, for a different flavor profile.
