This air fryer sweet potato crunch is a healthier and easier alternative to traditional sweet potato casserole. The sweet potatoes are air fried to crispy perfection and topped with a crunchy pecan and oat topping. Perfect for a holiday side dish or a cozy weeknight meal.

Ingredients

  • 3 large sweet potatoes, peeled and cut into 1-inch cubes

  • 2 tablespoons melted butter

  • 1 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/4 cup brown sugar

  • 1/2 cup rolled oats

  • 1/2 cup chopped pecans

  • 1/4 cup flour

  • 2 tablespoons melted butter

Directions

  • In a large bowl, toss the sweet potatoes with 2 tablespoons of melted butter, cinnamon, nutmeg, and brown sugar.
  • Preheat the air fryer to 375°F.
  • Spread the sweet potatoes in a single layer in the air fryer basket.
  • In a separate bowl, mix together the rolled oats, chopped pecans, flour, and 2 tablespoons of melted butter until well combined.
  • Sprinkle the oat and pecan mixture over the sweet potatoes in the air fryer.
  • Cook the sweet potatoes in the air fryer for 15-20 minutes, stirring halfway through, until tender and golden brown.
  • Serve the sweet potato crunch hot, garnished with extra chopped pecans if desired.

Notes

  • Make sure to cut the sweet potatoes into even-sized pieces for even cooking.
  • If you don’t have an air fryer, you can also bake this dish in the oven at 375°F for 25-30 minutes.
  • For a vegan version, use coconut oil or vegan butter in place of the butter.
  • This dish can be made ahead of time and reheated in the air fryer or oven before serving.
