A delicious and healthy twist on traditional fajitas, made with fresh vegetables and cooked in an air fryer for a crispy and flavorful meal.

Ingredients

  • 2 bell peppers, sliced

  • 1 onion, sliced

  • 1 zucchini, sliced

  • 1 yellow squash, sliced

  • 1 tablespoon olive oil

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • Salt and pepper, to taste

  • 8 tortillas

  • Toppings of your choice (salsa, avocado, cheese, etc.)

Directions

  • Preheat your air fryer to 400°F.
  • In a large bowl, toss the sliced vegetables with olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper.
  • Place the seasoned vegetables in the air fryer basket and cook for 15-20 minutes, shaking the basket every 5 minutes, until they are tender and slightly charred.
  • While the vegetables are cooking, warm the tortillas in a pan or in the microwave.
  • Once the vegetables are done, assemble your fajitas by adding the vegetables to the tortillas and topping with your desired toppings.
  • Serve and enjoy your delicious air fried veggie fajitas!
