These crispy and flavorful zucchini tots are a healthier alternative to traditional potato tots. They are made with fresh zucchini, breadcrumbs, and parmesan cheese, and cooked to perfection in an air fryer.

Ingredients

  • 2 medium-sized zucchinis

  • 1 egg, beaten

  • 1/2 cup breadcrumbs

  • 1/4 cup grated parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

Directions

  • Preheat your air fryer to 400 degrees Fahrenheit.
  • Cut 2 medium-sized zucchinis into small chunks and place them in a food processor.
  • Pulse until the zucchini is finely chopped.
  • Place the chopped zucchini in a clean kitchen towel and squeeze out any excess moisture.
  • In a mixing bowl, combine the chopped zucchini, 1 beaten egg, 1/2 cup of breadcrumbs, 1/4 cup of grated parmesan cheese, 1 tsp of garlic powder, and 1 tsp of Italian seasoning.
  • Mix everything together until well combined.
  • Using your hands, form small tots or balls from the zucchini mixture.
  • Place the tots in a single layer in the air fryer basket.
  • Cook for 10-12 minutes, flipping halfway through, until the tots are golden brown and crispy.
  • Serve hot with your favorite dipping sauce and enjoy!

Notes

  • You can also bake these zucchini tots in the oven at 400 degrees Fahrenheit for 20-25 minutes, flipping halfway through.
  • Feel free to add your favorite herbs and spices to the zucchini mixture for extra flavor.
  • Make sure to squeeze out as much moisture as possible from the zucchini to avoid soggy tots.
