The air fryer gives the meat a crispy exterior while keeping it juicy and flavorful on the inside. Serve it with steamed rice and a side of the reduced adobo sauce for a satisfying and comforting meal.


  • 2 pounds chicken or pork, cut into serving pieces

  • 1/2 cup soy sauce

  • 1/2 cup vinegar

  • 4 cloves garlic, minced

  • 1 tablespoon whole peppercorns

  • 2 bay leaves

  • 1/2 cup water

  • 2 tablespoons cooking oil


  • In a bowl, combine soy sauce, vinegar, minced garlic, peppercorns, and bay leaves. Mix well.
  • Add the chicken or pork pieces to the marinade and let it marinate for at least 30 minutes, or overnight in the refrigerator for more flavor.
  • Preheat the air fryer to 400°F (200°C) for a few minutes.
  • Place the marinated chicken or pork in the air fryer basket, making sure to shake off any excess marinade.
  • Air fry the adobo for 25-30 minutes, flipping the pieces halfway through the cooking time.
